What is Amala?
Amala is a swallow made from dried yam flour (elubo). Unlike Pounded Yam, which is white, Amala has a dark brown colour and a slightly earthy, more pronounced flavour. It is particularly associated with Yoruba cuisine and is a staple comfort food across Lagos and southwest Nigeria. Often paired with Efo Riro, Egusi, or Gbegiri bean soup.
Amala is a Yoruba staple. Its dark colour comes from the yam flour drying process. The combination of Amala, Efo Riro, and Gbegiri is one of the most celebrated combinations in Nigerian cooking.

The earthy flavour of Amala is more distinctive than Pounded Yam. Try it with Efo Riro — it is a classic Yoruba pairing.
