How Nigerian meals are put together
Most Nigerian restaurant meals follow a loose structure. Choose a base first, then a soup or sauce, then protein.
-
1
Choose a base
Rice (Jollof, Miliki Special, or House Special) or a swallow — Pounded Yam, Amala, Eba, or Wheat. Swallows are made to eat with soup. Rice dishes pair well with stew.
-
2
Add a soup or sauce
With swallow: Egusi, Efo Riro, Okra, Ogbono, or Bitter Leaf. Each has a distinct flavour and texture. With rice: Ayamase or House Special Sauce are classic pairings.
-
3
Choose protein
Chicken, turkey, fried fish, and shaki are the most common additions. Assorted options include more than one protein type. Add plantain or moi moi on the side if you want something extra.
Popular choices
Where regular customers start
These are the most commonly ordered combinations at Miliki Spot.
-
Jollof Rice, Chicken and Plantain
The Nigerian restaurant starting point. Jollof rice is smoky and rich. Fried plantain adds natural sweetness. A good introduction to the cuisine.
-
Egusi and Pounded Yam
The most ordered soup-and-swallow combination. Egusi is a ground melon-seed soup — earthy, rich, and satisfying. Pounded yam is smooth and slightly elastic.
-
Efo Riro and Amala
Efo Riro is a leafy vegetable soup with deep, slow-cooked flavour. Amala is a darker swallow with a firmer texture — a traditional Yoruba pairing.
-
Assorted Pepper Soup
A lighter, broth-based option. Nigerian pepper soup is spiced with local aromatic seeds — bold heat, clear broth. Good as a starter or a lighter meal on its own.
